Denny, the founder of Heartsby True, began making cider in 2017 after moving full-time to the western Catskills. It started with drives down old farm roads and backcountry lanes, spotting apples clinging to wild trees and branches bowing under forgotten fruit. With a few carboys and the help of friends, he began fermenting what he could gather—learning through seasons, stories, and slow, patient trial.By 2019, that humble beginning had taken root. Heartsby True Cider was born, just before planting a small orchard in Catskill, NY. Applying for a New York State farm cidery license felt like a turning point—an act of faith in the fruit, in the land, and in a quieter way of working that honored both.Even now, the cider still starts in the same way: with a backroad, a tree you didn’t expect, or a neighbor who wants to share what might’ve otherwise been left to fall. That search—the thrill of it, the unknowns, the generosity of the land—is what drives each harvest.Inspired by the old-world traditions of English and French country farmers, we ferment slowly with native yeast, using only whole, hand-picked fruit. Our ciders and wines are never filtered, never fined, and made without sulfites. Just fruit, time, and the hope that what’s true and wild can still speak for itself.
